My husband is Mexican, and he always tells me that with tomatoes, jalapeños, onion, and garlic (and, or course, salt and pepper) you can make so many tasty things.
This salsa is super simple and super tasty.
I make it almost every week and use it in all kinds of ways.

Ingredients
Tomatoes (8 or so)
Jalapeños (3-4 depending on how spicy you prefer)
Garlic (6 cloves)
Salt and Pepper, to taste
Olive Oil (Drizzle)
Instructions
Place the tomatoes and jalapeños in a saucepan and cover them with water. Bring to a boil and allow to simmer until soft. About 10 minutes or so.
While the tomatoes and chilies are simmering, smash and mince your garlic cloves. You don't need them quite yet, but this allows allicin to form. Allicin is beneficial for your health and is present in raw garlic about 5-10 minutes after cutting into the clove.
Transfer the tomatoes, jalapeños, and garlic to a blender. Add a cup or so of the leftover water and salt and pepper to taste.
Blend.
Discard the remaining water and return pan to the stove. Coat bottom of pan with olive oil.
Once hot, pour salsa from the blender into the pan.
Reduce heat and let simmer for 5 minutes or so.
